Homemade soup is one of my go-to's on a cold, snowy day. Low and slow, simmering all day. The aroma permeating throughout the house makes me smile. Meatball soup and cream of chicken are two of my favorites, but I don't think I can honestly say I am able to choose one over the other. They are both delicious.
Meatball soup is a recipe I found quite some time ago and quickly became another family favorite. Tomato juice, beef broth, homemade meatballs, tomatoes, spinach, seasonings and most often, bowtie pasta. I always add the pasta last because I like mine al dente. Oh, and as you can see from the pics, I like my soup very hearty. The chunkier, the better.
Just about everybody likes a hearty bowl of chicken noodle soup. My recipe has evolved over the years. Tender chicken, carrots, green beans, peas, corn, onion, chicken stock, heavy whipping cream, whatever pasta I'm in the mood for, and a variety of seasonings.
While these are my general guidelines for these dishes, I have been known to change them up and add other things. That is the joy of cooking. Making it your own. What is your favorite soup?
